Ingredients

  • 2 lb. pork shoulder, cut into cubes
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup chicken broth
  • 1/4 cup orange juice
  • 1/4 cup lime juice

Directions

  1. Place the pork cubes in a pressure cooker.
  2. In a small bowl, mix together the olive oil, cumin, chili powder, garlic powder, oregano, salt, and pepper.
  3. Rub the spice mixture onto the pork cubes.
  4. Add the chicken broth, orange juice, and lime juice to the pressure cooker.
  5. Secure the lid and set the pressure cooker to high pressure for 25 minutes.
  6. Once the cooking time is up, allow the pressure to release naturally for 10 minutes.
  7. Carefully open the lid and shred the pork with two forks.
  8. If desired, broil the pork in the oven for a few minutes to crisp up the edges.
  9. Serve the carnitas with your favorite taco toppings.
