Apricot Chicken with Balsamic Vinegar

Ingredients

  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons apricot preserves
  • 2 pounds boneless, skinless chicken breasts cut into 1-inch cubes

Directions

  1. In a small bowl, whisk together the olive oil, garlic, salt, pepper, balsamic vinegar and apricot preserves. Set aside.
  2. In a large skillet, heat the oil over medium-high heat. Add the chicken cubes and cook until golden brown and cooked through, about 5 minutes.
  3. Pour the reserved balsamic mixture over the chicken and stir to coat. Reduce the heat to low and cook for 5 more minutes.
  4. Serve the chicken with rice or your favorite side dish.
