Ingredients
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3 tablespoons balsamic vinegar
- 2 tablespoons apricot preserves
- 2 pounds boneless, skinless chicken breasts cut into 1-inch cubes
Directions
- In a small bowl, whisk together the olive oil, garlic, salt, pepper, balsamic vinegar and apricot preserves. Set aside.
- In a large skillet, heat the oil over medium-high heat. Add the chicken cubes and cook until golden brown and cooked through, about 5 minutes.
- Pour the reserved balsamic mixture over the chicken and stir to coat. Reduce the heat to low and cook for 5 more minutes.
- Serve the chicken with rice or your favorite side dish.
