Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon red pepper flakes
  • 1 (14.5 ounce) can diced tomatoes
  • 2 (15 ounce) cans cannellini beans, drained and rinsed
  • 1/2 cup vegetable broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 bunch kale, stems removed and chopped
  • 1/2 pound linguica, diced

Directions

  1. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook for 3 minutes, stirring occasionally.
  2. Add the paprika, oregano, cumin, and red pepper flakes and cook for 1 minute, stirring constantly.
  3. Add the tomatoes, beans, broth, salt, and pepper and bring to a boil. Reduce the heat to low and simmer for 10 minutes.
  4. Add the kale and linguica and simmer for an additional 10 minutes, stirring occasionally.
  5. Serve hot.
