Ingredients
1 pound of pork, cut into cubes
2 tablespoons of vegetable oil
1 onion, chopped
2 cloves of garlic, minced
1 teaspoon of ginger, minced
1 bell pepper, chopped
2 cups of Udon noodles, cooked according to package instructions
1/4 cup of soy sauce
1 tablespoon of sesame oil
1/2 teaspoon of sugar

Directions
Heat a large skillet or wok over medium-high heat.
Add the vegetable oil and pork cubes and cook for 5-7 minutes, stirring occasionally until the pork is golden brown.
Add the onion, garlic, and ginger and cook for 1-2 minutes until the onion is softened.
Add the bell pepper and cook for an additional 2-3 minutes.
Add the cooked Udon noodles and stir to combine.
In a small bowl, mix together the soy sauce, sesame oil, sugar, and red pepper flakes (if using).
Pour the sauce over the noodles and stir to combine.
Cook for an additional 2-3 minutes until the noodles are heated through.
Serve and enjoy!
