Ingredients

  • 1 pound of pork, cut into cubes
  • 2 tablespoons of vegetable oil
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon of ginger, minced
  • 1 bell pepper, chopped
  • 2 cups of Udon noodles, cooked according to package instructions
  • 1/4 cup of soy sauce
  • 1 tablespoon of sesame oil
  • 1/2 teaspoon of sugar
  • 1/2 teaspoon of red pepper flakes (optional)

Directions

  1. Heat a large skillet or wok over medium-high heat.
  2. Add the vegetable oil and pork cubes and cook for 5-7 minutes, stirring occasionally until the pork is golden brown.
  3. Add the onion, garlic, and ginger and cook for 1-2 minutes until the onion is softened.
  4. Add the bell pepper and cook for an additional 2-3 minutes.
  5. Add the cooked Udon noodles and stir to combine.
  6. In a small bowl, mix together the soy sauce, sesame oil, sugar, and red pepper flakes (if using).
  7. Pour the sauce over the noodles and stir to combine.
  8. Cook for an additional 2-3 minutes until the noodles are heated through.
  9. Serve and enjoy!
