Ingredients

  • 1 1/2 cups granola
  • 3 tablespoons butter, melted
  • 1/4 cup brown sugar
  • 2 8-ounce packages cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs, lightly beaten
  • 2 tablespoons all-purpose flour
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon

Directions

  1. Preheat oven to 350 degrees F. Grease a 9-inch springform pan with cooking spray.
  2. In a medium bowl, combine granola, melted butter, and brown sugar. Mix until well combined.
  3. Press the granola mixture into the bottom of the prepared pan.
  4. In a large bowl, beat cream cheese and granulated sugar until creamy. Add eggs, flour, vanilla, and cinnamon, and beat until smooth.
  5. Pour the cream cheese mixture over the granola crust and spread evenly.
  6. Bake for 30 to 35 minutes, or until the center is set. Allow to cool before slicing.
