Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (14.5-ounce) package fully-cooked smoked kielbasa, cut into ½-inch slices
- 2 (14.5-ounce) cans diced tomatoes with juice
- 2 (14.5-ounce) cans chicken broth
- 1 (16-ounce) package frozen collard greens
- Salt and pepper, to taste
Directions
- Heat the olive oil in a large soup pot over medium heat.
- Add the onion and garlic and cook, stirring often, until the onion is softened and lightly browned, about 5 minutes.
- Add the kielbasa and cook, stirring often, for an additional 5 minutes.
- Add the diced tomatoes, chicken broth, and collard greens. Stir to combine.
- Bring to a boil, then reduce heat to a simmer and cook, stirring occasionally, for 25 minutes.
- Season with salt and pepper, to taste.
- Serve hot.
