Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5-ounce) package fully-cooked smoked kielbasa, cut into ½-inch slices
  • 2 (14.5-ounce) cans diced tomatoes with juice
  • 2 (14.5-ounce) cans chicken broth
  • 1 (16-ounce) package frozen collard greens
  • Salt and pepper, to taste

Directions

  1. Heat the olive oil in a large soup pot over medium heat.
  2. Add the onion and garlic and cook, stirring often, until the onion is softened and lightly browned, about 5 minutes.
  3. Add the kielbasa and cook, stirring often, for an additional 5 minutes.
  4. Add the diced tomatoes, chicken broth, and collard greens. Stir to combine.
  5. Bring to a boil, then reduce heat to a simmer and cook, stirring occasionally, for 25 minutes.
  6. Season with salt and pepper, to taste.
  7. Serve hot.
