Ingredients
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
1 (14.5-ounce) package fully-cooked smoked kielbasa, cut into ½-inch slices
2 (14.5-ounce) cans diced tomatoes with juice
2 (14.5-ounce) cans chicken broth
1 (16-ounce) package frozen collard greens

Directions
Heat the olive oil in a large soup pot over medium heat.
Add the onion and garlic and cook, stirring often, until the onion is softened and lightly browned, about 5 minutes.
Add the kielbasa and cook, stirring often, for an additional 5 minutes.
Add the diced tomatoes, chicken broth, and collard greens. Stir to combine.
Bring to a boil, then reduce heat to a simmer and cook, stirring occasionally, for 25 minutes.
Season with salt and pepper, to taste.
Serve hot.
