Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (15 ounces) red beans, drained and rinsed
- 1 jar (24 ounces) tomato sauce
- 1 teaspoon Italian seasoning
- 9 lasagna noodles, cooked
- 1 cup ricotta cheese
- 1 egg
- 1/2 cup grated Parmesan cheese
- 2 cups shredded mozzarella cheese
Directions
- Preheat oven to 375 degrees F.
- Heat olive oil in a large skillet over medium heat. Add onion and garlic to the skillet and cook, stirring occasionally, until the onion is softened, about 5 minutes.
- Add red beans to the skillet and cook for 2 minutes. Add tomato sauce and Italian seasoning and simmer for 10 minutes.
- In a medium bowl, combine ricotta cheese, egg, and Parmesan cheese. Set aside.
- Spread 1 cup of the red bean sauce in the bottom of a 9x13-inch baking dish. Arrange 3 lasagna noodles over the sauce. Spread half of the ricotta mixture over the noodles. Top with 1 cup of red bean sauce and 1 cup of mozzarella cheese.
- Repeat layering with 3 more lasagna noodles, remaining ricotta mixture, 1 cup of sauce, and 1 cup of cheese.
- Top with remaining 3 lasagna noodles and remaining red bean sauce and mozzarella cheese.
- Bake in preheated oven for 30 minutes.
- Allow lasagna to cool for 15 minutes before serving.
