Easy Vegetarian Red Beans Lasagna

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 ounces) red beans, drained and rinsed
  • 1 jar (24 ounces) tomato sauce
  • 1 teaspoon Italian seasoning
  • 9 lasagna noodles, cooked
  • 1 cup ricotta cheese
  • 1 egg
  • 1/2 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese

Directions

  1. Preheat oven to 375 degrees F.
  2. Heat olive oil in a large skillet over medium heat. Add onion and garlic to the skillet and cook, stirring occasionally, until the onion is softened, about 5 minutes.
  3. Add red beans to the skillet and cook for 2 minutes. Add tomato sauce and Italian seasoning and simmer for 10 minutes.
  4. In a medium bowl, combine ricotta cheese, egg, and Parmesan cheese. Set aside.
  5. Spread 1 cup of the red bean sauce in the bottom of a 9x13-inch baking dish. Arrange 3 lasagna noodles over the sauce. Spread half of the ricotta mixture over the noodles. Top with 1 cup of red bean sauce and 1 cup of mozzarella cheese.
  6. Repeat layering with 3 more lasagna noodles, remaining ricotta mixture, 1 cup of sauce, and 1 cup of cheese.
  7. Top with remaining 3 lasagna noodles and remaining red bean sauce and mozzarella cheese.
  8. Bake in preheated oven for 30 minutes.
  9. Allow lasagna to cool for 15 minutes before serving.
