Ingredients

  • 2 cups fresh blackberries
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 jalapeno pepper, seeded and finely diced
  • 1 teaspoon vanilla extract
  • 2 refrigerated pie crusts
  • 1 egg, beaten
  • 1 tablespoon coarse sugar, for sprinkling

Directions

  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, gently toss together the blackberries, granulated sugar, lemon juice, cornstarch, diced jalapeno, and vanilla extract.
  3. Line a 9-inch pie dish with one of the pie crusts. Pour the blackberry mixture into the dish, spreading it evenly.
  4. Place the second pie crust on top and crimp the edges to seal. Cut a few slits on the top crust to allow steam to escape.
  5. Brush the top crust with the beaten egg and sprinkle with coarse sugar.
