Ingredients

  • 1 pound Polish sausage, cut into 1-inch pieces
  • 1 small head of red cabbage, shredded
  • 2 large potatoes, peeled and cubed
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 2 cups chicken broth
  • Salt and pepper, to taste

Directions

  1. In a large pot, heat the olive oil over medium heat. Add the Polish sausage and cook for 5 minutes, stirring occasionally.
  2. Add the onion and garlic and cook for another 3 minutes. Add the potatoes and cook for another 2 minutes.
  3. Add the red cabbage and cook until it’s wilted, about 3 minutes. Add the thyme and chicken broth and bring the mixture to a boil.
  4. Reduce the heat to low and simmer for 15 minutes, or until the potatoes are tender. Season with salt and pepper, to taste.
  5. Serve hot with a side of crusty bread or boiled potatoes.
