Ingredients
6 poblano peppers, sliced in half lengthwise and seeded
1/2 cup shredded Mexican cheese blend
1/2 cup cooked and crumbled chorizo
1/4 cup diced red onion
1/4 cup diced jalapeño pepper
1/2 teaspoon garlic powder
1/2 teaspoon smoked paprika
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 cup chopped fresh cilantro
1/4 cup sour cream
Directions
Preheat oven to 375 degrees F (190 degrees C).
In a large bowl, combine cheese, chorizo, onion, jalapeño, garlic powder, paprika, salt, and pepper. Mix well.
Stuff each pepper half with the cheese and chorizo mixture, and place on a baking sheet.
Bake in preheated oven for 25 minutes, or until the cheese is melted and bubbly.
Remove from oven, and top with cilantro and sour cream before serving.
