Ingredients

  • 6 poblano peppers, sliced in half lengthwise and seeded
  • 1/2 cup shredded Mexican cheese blend
  • 1/2 cup cooked and crumbled chorizo
  • 1/4 cup diced red onion
  • 1/4 cup diced jalapeño pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup sour cream

Directions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a large bowl, combine cheese, chorizo, onion, jalapeño, garlic powder, paprika, salt, and pepper. Mix well.
  3. Stuff each pepper half with the cheese and chorizo mixture, and place on a baking sheet.
  4. Bake in preheated oven for 25 minutes, or until the cheese is melted and bubbly.
  5. Remove from oven, and top with cilantro and sour cream before serving.
