- 2 tablespoons olive oil

Directions
- In a medium-sized bowl, combine the tofu, quinoa, tomatoes, red onion, cucumber, parsley, and mint.
- In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
- Pour the dressing over the tofu mixture and stir to combine.
