Ingredients
- 2 tablespoons olive oil
- 4 boneless skinless chicken breasts
- 1/2 teaspoon garlic powder
- 1/2 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup chicken broth
- 1/4 cup sun-dried tomatoes, chopped
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 cup fresh spinach, chopped
Directions
- Turn the Instant Pot to the sauté setting. Add the olive oil and heat.
- Season the chicken breasts with garlic powder, Italian seasoning, salt and pepper.
- Add the chicken breasts to the Instant Pot and cook for 3-4 minutes per side until golden brown.
- Add the chicken broth to the pot and stir to combine.
- Secure the lid on the Instant Pot and set the valve to sealing. Cook on high pressure for 10 minutes.
- When the cooking time is complete, let the pressure release naturally for 10 minutes then quick release the remaining pressure.
- Remove the chicken from the pot and set aside.
- Add the sun-dried tomatoes, heavy cream and Parmesan cheese to the pot and stir to combine.
- Return the chicken to the pot and add the spinach. Stir to combine.
- Secure the lid on the Instant Pot and set the valve to sealing. Cook on high pressure for 2 minutes.
- When the cooking time is complete, quick release the pressure.
- Serve the chicken and sauce over cooked pasta or mashed potatoes and enjoy!
