Ingredients

  • 1 cup dates, pitted and finely chopped
  • 1 cup rolled oats
  • 1 cup granola
  • 1/4 cup coconut oil
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Directions

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. In a medium bowl, combine the dates, oats, granola, coconut oil, honey, vanilla, cinnamon and salt.
  3. Stir until everything is combined and a dough forms.
  4. Line a baking sheet with parchment paper.
  5. Scoop out tablespoon-sized balls of the cookie dough and place them on the baking sheet.
  6. Bake for 10-12 minutes, or until the cookies are golden brown.
  7. Let the cookies cool before serving.
