Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup vegetable oil
- 1/2 cup plain Greek yogurt
- 1 teaspoon pure vanilla extract
- 2 cups peeled, pitted and diced plums
Directions
- Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan and set aside.
- In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg and salt. Set aside.
- In a large bowl, beat together the sugar, eggs, oil, yogurt and vanilla until smooth.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.
- Gently fold in the diced plums and pour the batter into the prepared pan.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool before serving.
