In a medium bowl, mix together the melted butter, 2 tablespoons sugar, and vanilla extract. Add the flour and salt and mix until the mixture resembles coarse crumbs. Add the cold water, 1 tablespoon at a time, and mix until the dough comes together. Roll out the dough to fit a 9 inch deep-dish pie plate.
In a separate bowl, mix together the apples, 1/4 cup sugar, cinnamon, and nutmeg. Pour the mixture into the prepared pie plate. Drizzle the melted butter over the top of the apples. Cover with the remaining rolled out dough, seal the edges, and cut several slits in the top.
Bake for 35 to 45 minutes, or until the crust is golden brown and the filling is bubbly.
