Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup white sugar
  • 1/2 cup packed brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chopped pistachios
  • 1/2 cup shredded coconut

Directions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a large bowl, cream together the butter, white sugar, and brown sugar until smooth.
  3. Beat in the egg and vanilla. Combine the flour, baking soda, and salt; stir into the creamed mixture.
  4. Mix in the pistachios and coconut.
  5. Drop by rounded teaspoonfuls onto ungreased cookie sheets.
  6. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
