Ingredients
- 1 1/2 cups all-purpose flour
- 1/3 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup butter, chilled and cut into small pieces
- 3/4 cup milk
- 2 cups mixed berries (strawberries, blueberries, raspberries, blackberries)
- 1/4 cup sugar
- Whipped cream, for serving
Directions
- Preheat oven to 375°F.
- In a large bowl, mix together the flour, sugar, baking powder, and salt. Add the butter and use a pastry cutter or two knives to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
- Add the milk and stir until just combined.
- Turn the dough out onto a lightly floured surface and knead just until it comes together. Pat the dough into a 9-inch circle, about 1/2-inch thick.
- Place on a baking sheet lined with parchment paper. Cut into 8 wedges and separate them slightly.
- Bake for 20-25 minutes, until lightly golden.
- In a medium bowl, combine the berries and sugar. Let sit for 10 minutes, stirring occasionally.
- Serve the shortcakes warm with the berry mixture and whipped cream.
