Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 2 cups fresh peaches, peeled and chopped
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Additional fresh peaches for garnish (optional)

Directions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Begin and end with the dry ingredients. Mix until just combined.
  5. Gently fold in the chopped peaches.
  6. Divide the batter evenly between the prepared cake pans. Smooth the tops with a spatula.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then transfer them to a wire rack to cool completely.
  9. In a chilled mixing bowl, whip the heavy cream until soft peaks form. Add the powdered sugar and vanilla extract, and continue to whip until stiff peaks form.
  10. Place one layer of the cooled cake on a serving plate. Spread a layer of whipped cream over the cake. Add the second layer of cake on top and frost the entire cake with the remaining whipped cream.
  11. If desired, garnish the cake with fresh peach slices.
  12. Refrigerate the cake for at least 1 hour before serving to allow the flavors to meld together.
  13. Slice and serve chilled. Enjoy!
