Ingredients

  • 2 large egg whites
  • 1/2 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted and cooled
  • 1/2 teaspoon pure vanilla extract
  • 1/4 teaspoon salt
  • Fortune cookie messages (written on small strips of paper)

Directions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a medium-sized bowl, whisk the egg whites until foamy.
  3. Add the melted butter, sugar, vanilla extract, and salt to the bowl. Stir until well combined.
  4. Sift the flour into the mixture and stir until you have a smooth batter.
  5. Drop tablespoon-sized portions of batter onto the prepared baking sheet, spacing them about 3 inches apart.
  6. Using the back of a spoon, spread the batter into 3 to 4-inch circles.
  7. Bake for 10-12 minutes or until the edges of the cookies turn golden brown.
  8. Remove the baking sheet from the oven and quickly transfer the cookies onto a clean surface.
  9. Place a fortune message in the center of each cookie and fold it in half, creating a semi-circle shape.
  10. Fold the cookie in half again, this time pinching the edges together to seal it. Be careful, the cookies will be hot.
  11. Place the folded cookies into a muffin tin or use a glass or mug to shape them while they cool. Allow them to cool completely before serving.
