Ingredients

  • 1 pound of dry pasta
  • 2 tablespoons of olive oil
  • 1 large onion, diced
  • 1 large fennel bulb, diced
  • 1 teaspoon of dried oregano
  • 1 teaspoon of dried thyme
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of freshly ground black pepper
  • 1/4 cup of freshly grated Parmesan cheese

Directions

  1. Bring a large pot of salted water to a boil over high heat.
  2. Add the pasta and cook until al dente, about 8 minutes.
  3. Meanwhile, heat the oil in a large skillet over medium heat.
  4. Add the onion and fennel and cook, stirring occasionally, until the vegetables are tender, about 10 minutes.
  5. Add the oregano, thyme, salt, and pepper and cook, stirring, for 1 minute.
  6. Drain the pasta and add it to the skillet. Toss to combine.
  7. Sprinkle with the Parmesan cheese and serve.
