Ingredients
1 pound parsnips, peeled and cut into 1-inch pieces
1 pound carrots, peeled and cut into 1-inch pieces
1 tablespoon olive oil
1/2 teaspoon garlic powder

1/2 cup vegetable broth
2 tablespoons butter
2 tablespoons heavy cream
Directions
Preheat the oven to 400°F.
In a large bowl, combine the parsnips, carrots, olive oil, garlic powder, salt, and pepper. Toss to coat the vegetables evenly.
Transfer the vegetables to a baking sheet and roast for 20 minutes, stirring once halfway through.
Transfer the roasted vegetables to a large saucepan and add the vegetable broth. Simmer for 10 minutes or until the vegetables are tender.
Remove the pan from the heat and add the butter and cream. Use an immersion blender to puree the vegetables until smooth.
Serve warm.
