Ingredients

  • 1 spaghetti squash
  • 1 pound ground turkey
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 cup mushrooms, sliced
  • 1 can crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 tablespoon Italian seasoning
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh basil, for garnish

Directions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Brush the cut sides of the squash with olive oil and place them cut-side down on a baking sheet.

  6. Add the diced onion, minced garlic, bell pepper, and mushrooms to the skillet. Cook until the vegetables soften.
  7. Stir in the crushed tomatoes and tomato paste, then add the Italian seasoning, paprika, salt, and pepper. Simmer for 10 minutes to allow the flavors to blend.
