Ingredients

  • 2 cups almond flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 6 tablespoons coconut oil, melted
  • 3 large eggs
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 1/2 cup fresh blueberries

Directions

  1. Preheat the oven to 350°F. Grease a 12-cup muffin tin with coconut oil.
  2. In a medium bowl, whisk together the almond flour, baking soda, and salt.
  3. In a large bowl, whisk together the coconut oil, eggs, honey, and vanilla extract until combined.
  4. Add the dry ingredients to the wet ingredients and mix until just combined.
  5. Fold in the blueberries.
  6. Divide the batter evenly among the prepared muffin cups. Bake for 25 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow the muffins to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
