- 1 can (15 oz) chickpeas, drained and rinsed
- 2 tablespoons tahini
- 2 tablespoons extra-virgin olive oil, plus more for topping
- 2 cloves garlic, minced
- 2 tablespoons freshly squeezed lemon juice
- 1/2 teaspoon ground cumin
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 cup water, or more as needed
- 1 tablespoon chopped fresh parsley, for garnish
- 1 tablespoon chopped fresh cilantro, for garnish
Directions
- In the bowl of a food processor, combine the chickpeas, tahini, olive oil, garlic, lemon juice, cumin, salt, and pepper.
- Process until the mixture is smooth, about 1 minute, stopping to scrape down the sides of the bowl as needed.
- With the food processor running, slowly add the water and process until the mixture is creamy and light, about 1 minute.
- Taste and adjust the seasoning, if desired.
- Transfer the hummus to a serving bowl and top with a drizzle of olive oil, parsley, and cilantro.
- Serve with crackers, vegetables, or pita bread.
