Ingredients
2–3 lb. tri-tip roast
3 cloves of garlic, minced
2 tablespoons olive oil
1 tablespoon dried thyme
1 tablespoon dried oregano
1 teaspoon dried rosemary
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
Salt and pepper to taste
Directions
Preheat the oven to 350°F.
In a small bowl, mix together the garlic, olive oil, thyme, oregano, rosemary, garlic powder, onion powder, and smoked paprika.
Rub the mixture all over the tri-tip, making sure to get into all the nooks and crannies.
Sprinkle with salt and pepper to taste.
Place the tri-tip in a roasting pan and cook for 25-35 minutes, or until the internal temperature reaches 140°F.
Let the roast rest for 10 minutes before slicing.
