Ingredients

  • 4 large sweet potatoes
  • 1/2 cup orange juice
  • 1/4 cup brown sugar
  • 2 tablespoons unsalted butter, melted

  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1 cup pecans, chopped

  • 1/4 cup brown sugar
  • 2 tablespoons unsalted butter, cold and cubed

Directions

  1. Preheat the oven to 375°F (190°C). Grease a 9x13-inch baking dish.
  2. Prick the sweet potatoes all over with a fork, then place them on a baking sheet. Bake for 45-60 minutes, or until tender.
  3. Remove the sweet potatoes from the oven and let them cool for a few minutes. Peel off the skins and place the flesh in a large mixing bowl.
  4. Mash the sweet potatoes with a potato masher or fork until smooth.
  5. To the mashed sweet potatoes, add orange juice, brown sugar, melted butter, grated ginger, orange zest, cinnamon, salt, and nutmeg. Stir until well combined.
