  • 4 quince fruits
  • 2 cups water
  • 1 cup granulated sugar
  • 1 vanilla pod

Directions

  1. Rinse the quince fruits under running water to remove any dirt or impurities.
  2. Cut the quince fruits into quarters, removing the core and seeds.
  3. Place the quince quarters in a large pot and add water until the fruits are fully submerged.
  4. Slice the vanilla pod lengthwise and scrape out the seeds using a knife.
  5. Add the vanilla seeds and the pod to the pot with quince.
  6. Cover the pot and bring the mixture to a boil over medium heat.
  7. Once boiling, reduce the heat to low and let the quince simmer for about 30 minutes or until they become soft and tender.
  8. Remove the pot from the heat and take out the vanilla pod. Discard the pod.
  9. Using a potato masher or a fork, gently mash the cooked quince until the desired consistency is achieved. You can leave it chunky or mash it into a smoother compote.
  10. Return the pot to low heat and add the granulated sugar. Stir well to combine.
