Made with fresh salmon fillets and a delicious blend of spices, this homemade jerky is the perfect combination of savory and slightly sweet. It's the ideal snack for outdoor adventures, road trips, or simply satisfying your hunger in between meals. With a simple preparation process and just a few hours of drying time, you'll have a batch of irresistibly tasty salmon jerky ready to enjoy.

Ingredients

  • 2 pounds fresh salmon fillets
  • 1/2 cup soy sauce
  • 1/4 cup Worcestershire sauce
  • 2 tablespoons honey
  • 1 tablespoon liquid smoke
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper

Directions

  1. Preheat your oven to 175°F (80°C) and line a baking sheet with parchment paper.
  2. Slice the salmon fillets into thin strips, about 1/4 inch thick.
  3. In a bowl, whisk together the soy sauce, Worcestershire sauce, honey, liquid smoke, garlic powder, onion powder, black pepper, paprika, and cayenne pepper.
  4. Place the salmon strips in a resealable plastic bag and pour the marinade over them. Seal the bag and gently massage the marinade into the salmon to ensure each strip is well coated. Let it marinate in the refrigerator for at least 1 hour, or overnight for a stronger flavor.
  5. Remove the salmon strips from the marinade and transfer them to the prepared baking sheet, leaving a small gap between each strip.
  6. Place the baking sheet in the preheated oven and bake for 3-4 hours, or until the salmon jerky is dry but still slightly pliable. To test the doneness, gently bend a strip. It should crack slightly but not break.
  7. Once done, remove the salmon jerky from the oven and let it cool completely on the baking sheet.
  8. Store the salmon jerky in an airtight container at room temperature for up to 2 weeks. Enjoy it as a healthy snack whenever cravings strike!
