Ingredients

  • 2 acorn squash, cut in half lengthwise and seeds removed
  • 1/4 cup butter, melted
  • 1/4 cup honey
  • 1/4 cup freshly squeezed orange juice
  • 1 teaspoon orange zest
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Salt and pepper to taste

Directions

  1. Preheat oven to 375°F.
  2. In a small bowl, mix together melted butter, honey, orange juice, orange zest, cinnamon, nutmeg, and salt and pepper.
  3. Place squash halves, cut side up, on a baking sheet lined with parchment paper.
  4. Brush the glaze on the squash and bake for 25 minutes.
  5. Remove from oven and brush with remaining glaze. Increase oven temperature to 400°F and bake for an additional 25 minutes, or until the squash are tender.
  6. Serve warm and enjoy!
