2 acorn squash, cut in half lengthwise and seeds removed
1/4 cup butter, melted
1/4 cup honey
1/4 cup freshly squeezed orange juice
1 teaspoon orange zest
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Salt and pepper to taste
Directions
Preheat oven to 375°F.
In a small bowl, mix together melted butter, honey, orange juice, orange zest, cinnamon, nutmeg, and salt and pepper.
Place squash halves, cut side up, on a baking sheet lined with parchment paper.
Brush the glaze on the squash and bake for 25 minutes.
Remove from oven and brush with remaining glaze. Increase oven temperature to 400°F and bake for an additional 25 minutes, or until the squash are tender.
