Ingredients
- 2 acorn squash, cut in half lengthwise and seeds removed
- 1/4 cup butter, melted
- 1/4 cup honey
- 1/4 cup freshly squeezed orange juice
- 1 teaspoon orange zest
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- Salt and pepper to taste
Directions
- Preheat oven to 375°F.
- In a small bowl, mix together melted butter, honey, orange juice, orange zest, cinnamon, nutmeg, and salt and pepper.
- Place squash halves, cut side up, on a baking sheet lined with parchment paper.
- Brush the glaze on the squash and bake for 25 minutes.
- Remove from oven and brush with remaining glaze. Increase oven temperature to 400°F and bake for an additional 25 minutes, or until the squash are tender.
- Serve warm and enjoy!
