Ingredients

  • 1 can of chickpeas, drained and rinsed
  • 1/2 onion, chopped
  • 3 cloves of garlic, minced
  • 1/2 cup parsley, finely chopped
  • 1/4 cup cilantro, finely chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon coriander
  • 1 teaspoon paprika
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon baking powder
  • 1/4 cup chickpea flour
  • 1/4 cup olive oil, plus more for cooking

Directions

  1. In a food processor, combine the chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, paprika, sea salt, black pepper, baking powder, and chickpea flour. Pulse until combined and a thick paste forms.
  2. Divide the mixture into 8 equal portions and form each one into a patty.
  3. Heat the olive oil in a large skillet over medium-high heat. Add the patties to the skillet and cook for 4-5 minutes, flipping once during cooking, until golden brown on each side.
  4. Serve the burgers on buns with your favorite toppings and condiments.
