Ingredients

  • 1/2 cup butter
  • 1 onion, finely chopped
  • 2 stalks celery, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon dried sage
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 8 cups cornbread, crumbled
  • 2 cups chicken broth
  • 2 eggs, beaten

Directions

  1. Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  2. In a large skillet over medium heat, melt butter. Add onion, celery, parsley, sage, thyme, salt, and pepper. Cook, stirring occasionally, until vegetables are softened, about 5 minutes.
  3. In a large bowl, combine crumbled cornbread and cooked vegetables. Pour in chicken broth and beaten eggs, and mix until well combined.
  4. Transfer mixture to baking dish, and spread evenly. Bake for 30 minutes, or until top is golden brown and dressing is cooked through.
