Ingredients

  • 1 cup fresh pomegranate arils
  • 1/2 cup diced red onion
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon chopped fresh mint
  • 1 tablespoon chopped fresh parsley
  • 1 jalapeno, seeded and diced
  • 1 garlic clove, minced
  • 2 tablespoons fresh lime juice
  • 1 tablespoon extra-virgin olive oil
  • Salt and pepper, to taste

Directions

  1. In a medium bowl, combine the pomegranate arils, red onion, cilantro, mint, parsley, jalapeno, and garlic. Stir to combine.
  2. Add the lime juice, olive oil, salt and pepper. Stir until evenly combined.
  3. Cover the bowl and place in the refrigerator for 1 hour to allow the flavors to meld together.
  4. Serve with chips or tacos.
