Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken thighs
  • 1 teaspoon smoked paprika
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup farro
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 2 cups baby spinach

Directions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the chicken thighs and season with the smoked paprika, Italian seasoning, garlic powder, salt, and pepper.
  2. Cook, stirring occasionally, for 5 minutes. Add the onion and garlic and cook for an additional 5 minutes until the chicken is cooked through and the vegetables are softened.
  3. Stir in the farro and chicken broth and bring to a simmer. Reduce the heat to medium-low, cover the pan, and simmer for 15 minutes.
  4. Stir in the heavy cream and spinach and simmer for an additional 5 minutes until the farro is cooked through and the sauce has thickened.
  5. Serve warm.
