Ingredients

  • 1 cup millet
  • 1 cup water
  • 1/4 cup honey
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Directions

  1. Preheat oven to 350°F.
  2. In a medium saucepan, bring the millet and water to a boil.
  3. Reduce heat and simmer for 15 minutes, or until all the water is absorbed.
  4. Stir in honey, baking powder, and salt.
  5. Scoop the batter into a greased muffin tin, filling each cup about 3/4 full.
  6. Bake for 15 minutes, or until lightly golden and a toothpick inserted into the center comes out clean.
  7. Let cool for 5 minutes before removing from the tin.
