Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 8 oz cremini mushrooms, sliced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Directions

  1. Season the chicken thighs with salt and pepper.
  2. In a large skillet, heat olive oil over medium-high heat. Add the chicken thighs and cook until browned, about 3-4 minutes per side. Remove the chicken from the skillet and set aside.
