These easy black bottom cupcakes are a decadent treat that combines a rich chocolate cake with a creamy cream cheese filling. Perfect for dessert or a special occasion, these cupcakes are sure to be a hit with everyone!

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup white sugar
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup vegetable oil
  • 1 tablespoon white vinegar
  • 1 teaspoon vanilla extract
  • 1 cup water
  • 8 oz cream cheese, softened
  • 1/3 cup white sugar
  • 1 egg
  • 1/8 teaspoon salt
  • 1 cup semisweet chocolate chips

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Line muffin tin with cupcake liners.
  2. In a large bowl, mix together flour, 1 cup sugar, cocoa, baking soda, and 1/2 teaspoon salt. Stir in oil, vinegar, and vanilla. Add water and mix until smooth.
  3. In a separate bowl, beat cream cheese with 1/3 cup sugar, egg, and 1/8 teaspoon salt until smooth. Stir in chocolate chips.
  4. Fill each muffin cup halfway with chocolate batter. Top with a spoonful of cream cheese mixture.
  5. Bake in preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool in pan for 10 minutes, then transfer cupcakes to a wire rack to cool completely.
