Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1/2 cup pumpkin puree
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 2 cups old-fashioned rolled oats

Directions

  1. Preheat oven to 350°F and line two baking sheets with parchment paper or silicone baking mats.
  2. In a medium bowl, whisk together the flour, baking powder, cinnamon, nutmeg, ginger, cloves, and salt.
  3. In a large bowl, use an electric mixer to cream together the butter and sugars until light and fluffy.
  4. Add the pumpkin puree, egg, and vanilla extract and mix until combined.
  5. Add the dry ingredients to the wet ingredients and mix until just combined.
  6. Stir in the oats.
  7. Drop the cookie dough onto the prepared baking sheets, about 2 tablespoons of dough per cookie. Bake for 15 minutes or until lightly golden brown.
  8. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
