Ingredients

  • 1 tablespoon olive oil
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 cup frozen corn kernels
  • 1/4 cup salsa
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1 cup shredded cheddar cheese

Directions

  1. Heat the olive oil in a large skillet over medium heat. Add the onion, garlic, salt, and pepper and cook, stirring occasionally, until the onion is softened, about 5 minutes.
  2. Add the black beans, corn, salsa, cumin, and chili powder and cook, stirring occasionally, until heated through, about 5 minutes.
  3. Stir in the cheese until melted, about 1 minute.
  4. Serve warm.
