Ingredients
2 cups of white long grain rice
1 onion, chopped
1 green pepper, chopped
1 red pepper, chopped

Directions
Heat the olive oil in a large saucepan over medium-high heat.

Add the rice to the pan and stir until the rice is coated with the oil and spices.
Add 2 cups of water to the pan and bring to a boil.
Once boiling, reduce the heat to low, cover the pan, and let the rice simmer for 20 minutes.
After 20 minutes, add the frozen peas, corn, and cilantro to the pan and stir to combine.
Cover the pan and continue to cook for another 10 minutes, or until all of the liquid has been absorbed.
Remove from the heat and let the rice sit, covered, for 10 minutes before serving.
