Directions
Heat the olive oil in a large skillet over medium heat. Add the onion, bell pepper, and garlic and cook for 4-5 minutes, or until the vegetables are soft.
Add the cumin, oregano, salt, pepper, and red pepper flakes and cook for 1-2 minutes.
Stir in the diced tomatoes, tomato sauce, and corn. Bring to a simmer and cook for 5 minutes.
Add the chicken and cook for 8-10 minutes, or until the chicken is cooked through.
Serve over rice or your favorite side.
