Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (8 ounce) can tomato sauce
  • 1 (15.25 ounce) can corn, drained
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

Directions

  1. Heat the olive oil in a large skillet over medium heat. Add the onion, bell pepper, and garlic and cook for 4-5 minutes, or until the vegetables are soft.
  2. Add the cumin, oregano, salt, pepper, and red pepper flakes and cook for 1-2 minutes.
  3. Stir in the diced tomatoes, tomato sauce, and corn. Bring to a simmer and cook for 5 minutes.
  4. Add the chicken and cook for 8-10 minutes, or until the chicken is cooked through.
  5. Serve over rice or your favorite side.
