Shrimp and Crab Bisque

Ingredients

  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 1 rib celery, chopped
  • 1 clove garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper
  • 1/4 cup dry sherry
  • 2 cups seafood stock
  • 1 pound cooked shrimp, peeled and deveined
  • 1/2 pound cooked crabmeat
  • 1/2 cup heavy cream
  • Salt and pepper to taste

Directions

  1. Heat the oil in a large pot over medium heat.
  2. Add the onion, celery, garlic, thyme, oregano and cayenne pepper. Cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
  3. Add the sherry and cook until it is almost evaporated, about 2 minutes.
  4. Add the seafood stock and bring to a boil. Reduce the heat to low and simmer for 15 minutes.
  5. Add the shrimp and crabmeat and cook until heated through, about 3 minutes.
  6. Stir in the cream and season with salt and pepper to taste.
  7. Serve hot.
