Ingredients

  • 3/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice
  • 2 large eggs
  • 1 can (15 ounces) pure pumpkin
  • 1 can (12 fluid ounces) evaporated milk
  • 1 unbaked 9-inch (4-cup volume) deep-dish pie shell

Directions

  1. Preheat oven to 425°F.
  2. In a large bowl, combine the sugar, cinnamon, ginger, nutmeg and allspice. Whisk in the eggs until combined.
  3. Stir in the pumpkin and evaporated milk until blended.
  4. Pour into the pie shell. Place on a baking sheet.
  5. Bake for 15 minutes. Reduce oven temperature to 350°F; bake for an additional 40 minutes or until a knife inserted near the center comes out clean.
  6. Cool on a wire rack for 2 hours.
  7. Serve immediately or refrigerate.
