Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 cups old-fashioned rolled oats
  • 1 cup raisins (optional)
  • 1 cup chopped walnuts (optional)

Directions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, combine the flour, baking soda, and salt. Gradually add the dry ingredients to the creamed mixture, mixing well.
  5. Stir in the rolled oats until well combined. If desired, add the raisins and chopped walnuts.
  6. Drop rounded tablespoons of dough onto ungreased baking sheets, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes or until golden brown around the edges.
  8. Remove from the oven and let the cookies cool on the baking sheets for 5 minutes.
  9. Transfer the cookies to wire racks to cool completely. Enjoy!
