Directions
Preheat the oven to 350˚F (175˚C). Grease a baking sheet with cooking spray.
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
In a separate bowl, mix together the melted butter and brown sugar until combined. Add the egg and vanilla extract and mix until smooth.
Add the dry ingredients to the wet ingredients and mix until just combined. Stir in the oats and chocolate chips or nuts, if using.
Drop the dough by heaping tablespoons onto the prepared baking sheet, leaving about 2 inches of space between each cookie. Bake for 12-14 minutes, or until the edges are lightly golden brown.
Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
