Ingredients

  • 1 large head of cabbage
  • 1 pound ground beef

Directions

  1. Preheat the oven to 350°F (175°C).
  2. Bring a large pot of water to a boil. Carefully remove the core from the cabbage, then place the whole head of cabbage in the boiling water. Cook for about 5 minutes or until the outer leaves are tender and can be easily removed with tongs. Remove the cabbage from the pot and let it cool.
  3. In a mixing bowl, combine the ground beef, cooked rice, chopped onion, minced garlic, dried thyme, dried dill, salt, and pepper. Mix well until all the ingredients are evenly incorporated.
  4. Take the cooled cabbage and carefully remove the outer leaves, being careful not to tear them. Lay the cabbage leaves flat on a cutting board and trim the thick rib from each leaf.
  5. Place about 2 tablespoons of the ground beef mixture in the center of each cabbage leaf. Fold the sides of the leaf over the filling and roll it up tightly, similar to a burrito. Repeat with the remaining cabbage leaves and filling.
  6. In a large ovenproof skillet or casserole dish, spread a thin layer of tomato sauce on the bottom. Arrange the cabbage rolls side by side, seam side down, in the skillet or dish.
  7. In a small saucepan, melt the butter over medium heat. Stir in the flour to make a roux. Cook for 1-2 minutes until the mixture is golden brown. Slowly whisk in the remaining tomato sauce and broth until smooth. Bring the sauce to a simmer, stirring constantly, until it thickens slightly.
  8. Pour the tomato sauce mixture over the cabbage rolls, covering them completely. Cover the skillet or dish with foil and bake in the preheated oven for 45 minutes.
  9. Once done, remove the foil and bake for an additional 10-15 minutes until the cabbage rolls are cooked through and the sauce is bubbling.
  10. Serve the Norwegian cabbage rolls hot, spooning some of the tomato sauce over each roll. Enjoy this classic Scandinavian dish with a side of mashed potatoes or boiled carrots.
