Ingredients

  • 2 pounds boneless turkey breast
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, finely chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 6 slices bacon
  • 1 cup chicken broth

Directions

  1. Preheat the oven to 375°F (190°C).
  2. Place the turkey breast on a cutting board and slice it horizontally, keeping the two halves attached.
  3. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened.
  4. Add the mushrooms, dried thyme, dried rosemary, salt, and black pepper to the skillet. Cook for about 5 minutes, or until the mushrooms release their liquid and start to brown.
  5. Remove the skillet from heat and stir in the breadcrumbs, Parmesan cheese, and fresh parsley.
  6. Lay the bacon slices side by side on a piece of plastic wrap. Spoon the mushroom stuffing onto the bacon slices, spreading it evenly.
  7. Place the turkey breast on top of the mushroom stuffing, and carefully roll it up, using the plastic wrap to help secure the roll. Remove the plastic wrap.
  8. Transfer the rolled turkey breast onto a baking dish.
  9. Pour the chicken broth into the baking dish.
  10. Cover the baking dish with foil and bake for 40 minutes.
  11. Remove the foil and continue baking for another 15-20 minutes, or until the turkey is cooked through and golden brown on top.
  12. Remove from the oven and let it rest for 5 minutes before slicing.
  13. Slice the roulade into thick slices and serve with the pan drippings as a sauce.
