This no rice chicken fried rice recipe is a healthier twist on the classic dish, using cauliflower rice instead of traditional rice. Packed with veggies and lean chicken, this dish is flavorful and satisfying without the guilt. Perfect for a quick weeknight dinner or meal prep!

Ingredients

  • 1 head cauliflower, riced
  • 1 lb boneless, skinless chicken breast, diced
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 1 cup frozen mixed vegetables
  • 2 eggs, beaten
  • 3 tbsp low-sodium soy sauce
  • 1 tsp sesame oil
  • Salt and pepper to taste
  • Green onions, chopped, for garnish

Directions

  1. Heat 1 tbsp of vegetable oil in a large skillet over medium heat. Add the chicken and cook until browned and cooked through. Remove from skillet and set aside.
  2. In the same skillet, add the remaining tbsp of oil. Add garlic and onion, and sauté until softened. Add cauliflower rice and cook for 5-7 minutes, stirring occasionally.
  3. Push cauliflower rice to one side of the skillet, and pour beaten eggs into the empty side. Scramble the eggs until cooked through, then mix with cauliflower rice.
  4. Add frozen vegetables, cooked chicken, soy sauce, and sesame oil to the skillet. Stir everything together and cook for another 2-3 minutes.
  5. Season with salt and pepper to taste. Serve hot, garnished with chopped green onions.
