Ingredients
- 1 head cauliflower, riced
- 1 lb boneless, skinless chicken breast, diced
- 2 tbsp vegetable oil
- 2 cloves garlic, minced
- 1 small onion, diced
- 1 cup frozen mixed vegetables
- 2 eggs, beaten
- 3 tbsp low-sodium soy sauce
- 1 tsp sesame oil
- Salt and pepper to taste
- Green onions, chopped, for garnish
Directions
- Heat 1 tbsp of vegetable oil in a large skillet over medium heat. Add the chicken and cook until browned and cooked through. Remove from skillet and set aside.
- In the same skillet, add the remaining tbsp of oil. Add garlic and onion, and sauté until softened. Add cauliflower rice and cook for 5-7 minutes, stirring occasionally.
- Push cauliflower rice to one side of the skillet, and pour beaten eggs into the empty side. Scramble the eggs until cooked through, then mix with cauliflower rice.
- Add frozen vegetables, cooked chicken, soy sauce, and sesame oil to the skillet. Stir everything together and cook for another 2-3 minutes.
- Season with salt and pepper to taste. Serve hot, garnished with chopped green onions.
