Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 1 clove garlic, minced
  • 1 teaspoon Dijon mustard
  • 1 tablespoon red wine vinegar
  • 2 cups cooked green beans
  • 1 cup cherry tomatoes, halved
  • 1 head butter lettuce, torn into bite-sized pieces
  • 1 (6-ounce) can white tuna in water, drained and flaked
  • 4 hard-boiled eggs, chopped
  • 3 tablespoons capers, drained
  • 2 tablespoons chives, chopped
  • Salt and freshly ground black pepper, to taste

Directions

  1. In a small bowl, whisk together olive oil, garlic, Dijon mustard, and red wine vinegar until combined. Season with salt and pepper, to taste.
  2. In a large bowl, combine green beans, tomatoes, lettuce, tuna, eggs, capers, and chives. Pour dressing over the salad and toss to combine.
  3. Serve immediately.
