Ingredients
4 large artichokes
1/2 cup olive oil
1/2 cup butter
1/2 cup chopped onions
1/2 cup chopped celery
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon dried thyme
1/2 teaspoon dried rosemary
1/2 cup dry white wine
1/2 cup freshly grated Parmesan cheese
1/4 cup freshly chopped parsley
Salt and pepper to taste
Directions
Preheat oven to 375 degrees Fahrenheit.
Clean the artichokes by cutting off the top third and trimming off the tough outer leaves. Cut off the stems and discard.
In a large skillet, heat the olive oil and butter over medium heat. Add the onions, celery, and garlic and sauté for 5 minutes until softened.
Add the oregano, basil, thyme, and rosemary and sauté for an additional minute.
Add the white wine and simmer for 5 minutes until the liquid is reduced by half.
Stir in the Parmesan cheese and parsley and remove from heat.
Stuff the artichokes with the onion and herb mixture, being sure to fill all of the leaves.
Place the artichokes in a greased baking dish and pour the remaining onion and herb mixture over the top. Drizzle with additional olive oil.
Cover the dish with foil and bake for 45 minutes, or until the artichokes are tender. Remove from oven and let cool before serving.
