Broccoli-Ham-and-Rice Casserole

Ingredients

  • 1 cup uncooked white rice
  • 2 cups fresh broccoli florets
  • 1 cup diced ham
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart baking dish.
  2. In a large saucepan, cook the rice according to package directions. While the rice is cooking, steam the broccoli until tender.
  3. In the same saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute. Gradually whisk in the milk and cook, stirring constantly, until the mixture thickens. Remove from heat and stir in the garlic powder, salt, and pepper.
  4. In the prepared baking dish, combine the cooked rice, broccoli, ham, and cheese. Pour the sauce over the top and stir to combine.
  5. Bake for 25 to 30 minutes, or until heated through and the top is golden brown.

Interesting Facts

  • This casserole can be easily customized with other vegetables, such as cauliflower, carrots, or bell peppers.
  • Adding a few tablespoons of breadcrumbs on top of the casserole before baking will give it a nice crunch.
